I had some stuff in the refrigerator that I needed to use up, so I came up with these enchilada's which have about 2 tablespoons of each filling, hence the name :-)
Start out with some small tortilla's. I like to use these made by La Tortilla Factory (for my WW friends, these are only 1 Points Plus each!)
Spread 2 Tbs of butternut squash puree on one half...
Add 2 Tbs of cooked turkey sausage (rf ground chicken, beef, whatever you have):
Next: 2 Tbs of black beans:
2 Tbs of reduced fat shredded cheese:
And some spinach leaves:
Fold the other half of the tortilla over the filling:
Next pour over some enchillada sauce. I made my own, but you could use a can if you want. Personally, I do not care for the canned stuff. I like my sauce chunky!
Last but not least, sprinkle some more cheese over the top:
Bake at 350 for about 20 minutes, until the cheese is melted and the sauce is bubbling. Top with a tablespoon (or 2) of fat free sour cream, some chopped green onions and enjoy!
