I LOVE butternut squash and we have an abundance of it in our garden.Tonight I made butternut squash fries for myself. Start by cutting one small butternut squash in the shape of French fries. Spray with non stick spray, sprinkle with salt and chili powder and toss to combine.
Spread in a single layer on a cookie sheet and bake at 450 for abut 15 minutes. I had about half these with my ham and cheese sandwich. Yum!
And now let me tell you the absolute way to Matt's heart as far as food goes. I start by roasting some peppers (spicy ones are the ones of his choice)...
I mix equal amounts of homemade pesto and goat cheese (or cream cheese if you like) and stuff it inside the peppers:
Then I bake them in the oven for about 15 minutes until golden brown.
