We had a hamburger with zucchini fries for dinner tonight. The following recipe was inpired by Hungry Girl's zucchini fries...
I had half a zucchini and half a yellow squash, so I cut them into strips:
Instead of using breadcrumbs, I like to use this high fiber cereal. Never mind the number 2 on the box. I label every.single.thing in my pantry with Weight Watchers Points :-)
I put about 1/2 cup of the cereal in a baggie and rolled it into crumbs with a rolling pin. I added 1 tsp garlic powder, 1/4 tsp pepper, 1/4 tsp salt, 1 tsp oregano and 1/2 tsp paprika.
I took 1/2 cup of egg substitute, seasoned it with salt and pepper and poured it over the zucchini and squash, making sure every fry was coated with the egg:
Spray a cookie sheet with cooking spray, roll each fry in the cereal crumbs and place on the cookie sheet:
Bake at 375 for about 15 minutes. They come out soft on the inside (not mushy!) and so crispy on the outside. Good stuff!
