The other day while browsing on Pinterest, I came across an avocado grilled cheese sandwich. I was intrigued. I made my own Weight Watchers friendly version for lunch this afternoon and it was delicious. Matt agreed even though he is not a Weight Watcher ;-)
Per sandwich I used the following:
- two slices of reduced calorie bread
- 1 ounce slice of reduced fat swiss cheese
- 1 ounce of cajun turkey breast (we like things spicy around here)
- 1 small tomato, sliced
- 1 green onion, sliced
- 1/4 of an avocado, sliced
I topped it all off with some black pepper and it looked good enough to eat already:
I put some Sriracha Sauce on the other slice of bread before putting it on top; like I said, we like things spicy around here ;-)
I put them on the panini maker for a couple of minutes and ended up with delicious, gooey grilled cheese sandwiches. If you don't have a panini maker, you could simply go the old fashioned route and grill them on the stove.
This sandwich ended up costing me 8 PointsPlus. A bit more than I would normally like to use on a sandwich, but very worth it!

YUM!!!!! Not so spicy for me....but I can eliminate as needed!!!
